After I got sick and needed to start eating healthier, one snack I really missed, was chips! I used to eat Pringles like nobodies business! However, they are generally expensive and you can’t just have one... So.... I FINALLY broke down and bought a mandolin! I started making my own sweet potato and potato chips, and since you can only make a pan full at a time, you don’t end up eating too many. They are also extremely cheap! Less than a dollar per batch depending on the market price of sweet potatoes at the time. Especially because you only need that and household condiments.
You can pair these chips with tuna, like I did in the photo below, eat them along side a sandwich, or any of the other countless possibilities!
I bought this mandolin, however I recommend getting one that slices into french fries. This one was pretty misleading. It only slices into teeny strips.

Anyways, for my chips you’ll need:
- One Sweet potato
- A cookie sheet
- A large bowl
- Olive Oil (4 tbsp)
- Rock Salt (1 tbsp)
- Fresh Garlic (1 large clove or 2 small)
- Fresh Ground Pepper (2 tbsp)
Instructions:
1. Preheat Oven to 250 degrees Fahrenheit.
2. Slice Sweet Potato as THIN as possible!
3. Mince your garlic.
4. Put minced garlic and slices into large bowl and add the olive oil, salt, and pepper. You want each slice coated evenly in the olive oil. Let sit for about 5 minutes.
5. Place 1 layer of your sweet potato slices on the cookie sheet and place in the other for about 35 minutes.
6. Flip over each slice. Leave in for another 35 minutes.
7. Check to see what color you chips have become. You don’t want fully brown chips, just a dark orange. Keep checking every 10 minutes till the color becomes APPARENT.
8. Take out. Even though chips like still feel moderately soft, they harden as they cool.
